Chicken Filo Parcels
Chicken Filo parcels are a delicious family meal that smells amazing when cooking. The great thing about this chicken recipe is that you can add your own ingredients according to how you feel.
(or fillings of your choice: think spinach, pinenuts, pumpkin, cranberry, salmon, feta kumara)
Pre-heat the oven to 190°C
Cut chicken, bacon, mushrooms and onion into bite-sized pieces and grate the cheese.
In a bowl, mix together chicken, cheese, bacon, mushrooms and onion.
Place a sheet of filo pastry on a chopping board.
Brush or spray lightly with oil or melted butter.
Top with 2 more sheets of filo, brushing between each sheet with the oil or melted butter.
Place a spoonful of the mixture at the top of the filo.
Fold the sides of the filo over and rollup to securely enclose the filling.
Brush the top with oil.
Repeat with remaining filo and filling to make 6 parcels.
Bake at 190°C for 12-15 minutes or until golden brown.
Serve with a green salad.
