Perfect BBQ Steak

Serves 4

All you need for the perfect steak is:

4 pieces of Sirloin or Eye Fillet Steak
Your favourite seasonings (ie. Garlic Herb Salt)
Salt and Pepper
Rice Bran Oil
Worcestershire Sauce or similar
And here are the 10 best tips to get the perfectly cooked steak.
1. Buy fresh! Or at least thaw out your steak ahead of time. Make it easy on yourself and move the meat from the freezer to the fridge the day before. If you do forget to defrost the steak, use the microwave, but remember to use the defrost settings or you'll ruin a perfectly good piece of meat. And remember, before you cook it, have the meat at room temperature, out of the fridge.
2. Season the steak with dry ingredients first. Use your favourite seasoning, or just use salt and pepper. Remember to flavour both sides. You want both sides to taste good!
3. Then season the steak with wet ingredients. Worcestershire Sauce is an old fave. And remember to flip the steaks in the dish and do both sides.
4. Light the BBQ. If you don't have instant flick start, use a long handled lighter.
5. Clean the grill. After the barbeque has warmed up for 5-10 minutes, use a wire brush or polypad to give it a good clean.
6. Spray the BBQ grill with rice bran oil spray. Place the steaks on the grill. Use tongs so you don't pierce the steak and lose all the juices.
7. If you've got it, use the cover on the BBQ. Close the lid and let the smoke do the work. Don't worry about burning the steaks. The cover will prevent flames. Trust us on this - a good, smoked steak, is the only way to go.
8. Cook 3cm thick steaks, on a high BBQ setting, for no more than 6 minutes on each side.  You should know that with the lid down method, the barbeque will begin to really smoke when it's time to flip the meat.
9. Don't be afraid to take the steak off early when it's pinkish and let it rest. We recommend resting your steak for at least 5-10 minutes before serving.
10. For those rare steak lovers, reduce the cooking time on their pieces to 5-6 minutes each side and again, rest, but for a shorter time.
And the Golden Rule, only flip the steak ONCE to seal the meat's juices.

RARE

Cook each side 2 minutes, turn once only. Description: Internal very red colour, very moist, red juices.
Touch Test: Very soft to touch

MEDIUM RARE

Cook each side approx. 3-4 minutes. Turn once only before pink beads of moisture appear on top surface of each side. Description: Internal lighter red colour, moist, pink juices.Touch Test: soft and springy.

MEDIUM

Cook 4-6 minutes each side. Turn once only.Description: Internal pink red colour, moist, clear to pink juices.
Touch Test: Firm and springy.

WELL DONE

Cook 2-4 minutes each side, then reduce heat and cook a further 4-6 minutes.Description: Internal stone grey colour, dry, clear or no sign of pink juices. Touch Test: Very firm to touch.
