This scrummy brekkie/brunch eggs bene recipe is perfect for Sunday mornings with the papers, a coffee and the love of your life.

Serves 2

For Ultimate Eggs Benedict, you will need:

2 Bagels
2-3 Tbsp wholegrain mustard
Bunch of asparagus, blanched
Semi-dried tomatoes
4 strips of grilled, crispy bacon
4 poached eggs
Hollandaise sauce (store-bought Kato or made from our recipe – click below on recipe link)

How to:

1. Split bagels in half, toast and spread with mustard. Arrange on 2 serving plates.
2. Top with a few asparagus spears, bacon, two poached eggs each and a few semi-dried tomatoes.
3. Smother with Hollandaise sauce.

Trudi’s tips:
If asparagus is out of season, stack with crispy hash browns and steamed fresh spinach instead.
