Almond slice

For afternoon tea, this rich almond slice is always popular. The slice is made with ground almonds which are sandwiched between layers of plain biscuits.  Sneak them into your backpack when out cycling or hiking as they’re great energy food too.

(for 25 cmx23cm baking tray)

Ingredients 

A:
100g unsalted butter

100g caster sugar

200g plain flour

2 eggs

B:

2 eggs

250g sugar

250g ground almonds

1 tablespoon plain flour

1 tablespoon butter melted

50g sliced almonds

Method

Make (A) mixture. Cream the butter and mix sugar. Beat until the butter and sugar become pale and smooth cream texture. Add eggs and beat well until smooth.Add flour and mix well. The mixture is soft.

Make (B) mixture. Beat eggs with sugar until pale and fluffy. Add ground almonds, flour and butter. Combine well.

Pre heat oven to 160?C. Line a baking tray with baking paper.

Spread ½ of A mixture on the bottom of baking tray over the paper evenly. Top with all of the B mixture. Then rest of the A mixture on top.

Place sliced almonds on top and bake in oven for 50-60 minutes.

Let cool. Cut into 2 x 5cm bars or 3cmx3cm squares.
