Berry Ambrosia - Fresh Ideas
This variation on the traditional ambrosia dessert salad is delicious and always a crowd pleaser. It’s brilliant as a festive dessert and quick and easy if you need to take a plate in a hurry. You can use frozen berries if fresh ones aren’t in season.

Ingredients
 
 

  • 1 punnet blueberries approx 125g
  • 1 punnet strawberries approx 400g, quartered
  • 500 g seedless grapes halved if large
  • 1 cup desiccated coconut
  • 100 g mini marshmallows or chop large ones
  • 500 g sour cream
  • Icing sugar for sweetening if needed

Instructions
 

  • Rinse all fruit and combine in a bowl with the coconut, marshmallows and sour cream. Fold mixture to make sure it’s evenly combined.
  • Taste and add icing sugar to sweeten if needed.
  • Serve in dessert, martini or old fashioned champagne glasses.
