Chicken Filo Parcels

Chicken Filo parcels are a delicious family meal that smells amazing when cooking. The great thing about this chicken recipe is that you can add your own ingredients according to how you feel.

Ingredients
 
 

  • 300 g smoked chicken
  • 4 rashers bacon cooked and chopped
  • 1 onion sliced thinly
  • ½ cup cheddar cheese grated
  • 4 mushrooms sliced
  • 18 filo pastries
  • butter melted

Instructions
 

  • Pre-heat the oven to 190°C.
  • In a bowl, mix together chicken, cheese, bacon, mushrooms and onion.
  • Place a sheet of filo pastry on a chopping board. Brush or spray lightly with oil or melted butter. Top with 2 more sheets of filo, brushing between each sheet with the oil or melted butter.
  • Place a spoonful of the mixture at the top of the filo.
  • Fold the sides of the filo over and rollup to securely enclose the filling. Brush the top with butter/oil. Repeat with remaining filo and filling to make 6 parcels.
  • Bake at 190°C for 12-15 minutes or until golden brown.
  • Serve with a green salad.

Notes

You can use different combinations of the fillings: think spinach, pine nuts, pumpkin, cranberry, salmon, feta,  kumara.
