Chicken & Pasta bake

Ingredients
 
 

  • 200 g Penne pasta
  • 400 g Chicken breast cut into bite-sized pieces
  • 2 cups Frozen mixed vegetables
  • 1 jar tomato pasta sauce
  • 1 cup grated cheese
  • fresh parsley to garnish

Instructions
 

  • Preheat the oven to 190°C.
  • Cook the pasta in boiling salted water until tender. Drain the pasta and transfer to an ovenproof dish.
  • Heat oil in a frying pan. Brown chicken until cooked through.
  • Cook the vegetables in the microwave or boiling water until tender.
  • Add chicken and vegetables to the pasta and toss to combine.
  • Pour the tomato sauce over the pasta and sprinkle grated cheese on top.
  • Bake in the oven for 20minutes.
  • Serve garnished with fresh parsley.

Notes

Smart tip: You can use left-over roast chicken meat or a can of tuna in this dish.
