For Crockpot Meatloaf, you need:
4 large potatoes
6 sliced carrots
2 eggs, beaten
3/4 cup breadcrumbs
1/3 cup tomato sauce
1 small onion, finely diced
3/4 teaspoon salt
1/4 teaspoon dried marjoram or mixed herbs (1-2 Tbsp fresh from your garden ever better!)
1/4 teaspoon freshly ground black pepper
How to make Crockpot Slow Cooked Meatloaf:
Place carrots and potatoes in the bottom of the slow cooker or crockpot.
Combine remaining ingredients.
Mix well and shape into a loaf.
Place the loaf on top of the vegetables, it should not touch the sides of your crockpot.
Cover and cook on low for 8 to 10 hours.
You can make loaf ahead and freeze in tin foil. The crockpot meatloaf will cook just as well if put into cooker frozen, just cook 10 to 12 hours.
