This stuffed potato recipe is easy, the kids will adore it (so much so they can even help) and it’s tummy filling goodness. Potatoes contain half the vitamin C amount that children need daily. And who can resist spaghetti and cheese!
Kids Cheesy Spaghetti Stuffed Potatoes Ingredients:
4 large potatoes, scrubbed and rinsed
420g can Spaghetti
75g ham, chopped
2 Tblsp chopped chives or parsley (from your HerbStation)
3 Tblsp grated edam cheese
1. Pierce the potatoes with a fork, arrange evenly in a microwave and cook on high for 15-20 minutes or until tender, turning halfway though cooking. Cool until easy to handle.
2. Cut a slice off the top of each potato and scoop out the filling. Place the potatoes in a shallow ovenproof dish.
3. Mix the Spaghetti, ham, chives and scooped out potato together and use to fill the hollowed out potatoes with spaghetti mixture, sprinkle with grated cheese and herbs.
4. Bake at 200°C for 12-15 minutes or until hot and golden.
