Matthew’s Vege Soup

Most kids love soup and they’re very easy to make, especially with a slow cooker. A perfect kids-in-the-kitchen recipe for winter and the school holidays.

Ingredients

25g butter
2 small red onions, peeled and sliced
2 cloves of garlic, peeled and sliced
500g of your favourite winter veges – Matthew chose golden kumara, leek, parsnip, broccoli, yams and potato
1 packet of King soup mix (barley, carrot etc)
4 cups of chicken stock (or vege stock)
Fresh or dried herbs
Salt and pepper to season

Method

  1. Turn the slow cooker onto high.
  2. Prepare your onions and garlic.
  3. Melt the butter in the slow cooker and add the onions and garlic.
  4. Prepare the veges, peel and dice.
  5. Add the veges to the onions and butter and stir.
  6. Pour in the soup mix.
  7. Add the stock, herbs and seasoning.
  8. Turn the slow cooker back to medium and leave for two hours while the kids play!
  9. Blend the soup with a liquidiser or serve as is, all chunky. We love the chunky style vege soup.

Serve in individual soul bowls with fresh herbs and crusty, buttered bread.
