Miso Mince Noodle Bowl

Quick, easy and delicious. This Miso Mince Noodle bowl is just perfect for a busy weeknight’s supper. I guarantee this Asian dish will become part of your routine repertoire. You can add other vegetables to the noodles or sauce for variation.

Ingredients
 
 

  • 2 packs Hokkien Noodles
  • 2-3 cabbage leaves shredded

For the Miso mince sauce:

  • 200 g pork mince
  • 2 dried shiitake mushrooms hydrated and chopped
  • 2-3 Spring onions chopped
  • 1 clove garlic chopped
  • 1 small piece Fresh ginger chopped
  • 2 Tbsp miso
  • 1 Tbsp sugar
  • 1 Tbsp Soy sauce
  • 1 Tbsp sake or dry white wine
  • 1 Tbsp Olivado cooking oil

Instructions
 

  • Heat the oil in a frying pan over medium heat. Add garlic and ginger and stir fry. When it is fragrant, add mince, shiitake and spring onions. Continue to stir fry.
  • In a small bowl, mix miso, sugar, soy sauce and sake. Add it to the mince & veges. Mix well and leave to cook for 2-3 minutes.
  • In a large sauce pan, boil plenty of water. Cook noodles according to the instructions on the packet. Just before finish cooking the noodles, add shredded cabbage, then drain noodles and cabbage together. Do not overcook the cabbage.
  • Place noodles with cabbage in individual serving bowls. Top with the Miso mince sauce. Serve immediately.
