Adopt an English theme for the Royal Wedding, and make some sweet blueberry scones. So delicious and so english! Complement this recipe with a nice cup of tea.
You will need:
2 c flour
1/3 c white sugar
2 tsp baking powder
1/8 tsp salt
1/3 c butter, cut into pieces
1 c fresh blueberries
Zest of one lemon (optional)
1 large egg, lightly beaten
1 tsp vanilla extract
1/2 c cream or milk
Extra milk, to brush on scones
Preheat oven to 233 C.
Combine flour, sugar, baking powder and salt into a bowl and mix well.
Cut in the butter until crumbly until mixture is crumbly.
Add blueberries and lemon zest.
In a seperate bowl, mix together cream, egg and vanilla and then add to the flour mixture.
Stir ingredients just until moistened.
Place dough to a lightly floured surface and roll dough out until its around 1 inch thick.
Cut into triangles and place the scones on the baking sheet.
Brush the tops of the scones with milk.
Bake the scones until lightly browned on top, 15-20 minutes
Makes 8 scones
