Spicy Pineapple and Mint Salsa

This salsa is perfect with a fish dish. The fusion of flavours create an explosion in your mouth. However, careful with the chillies, especially if your dinner guests are not big on spice.

Serves 8

You Will Need:

1/2 red onion
1 or 2 chiles
1 small garlic clove
1/2 C freshly squeezed orange juice
1 Tbsp freshly squeezed lime juice
1 pineapple, peeled and chopped into 1/2-inch pieces
1 1/2 Tsp extra-virgin olive oil
1 C loosely packed fresh mint leaves

Method:

Thinly slice the onion.
Seed the chillies and very thinly slice.
Mince the garlic clove.
Peel the pineapple and chop into 1/2 inch cube pieces.
In a medium bowl, combine the onion, chiles, garlic, orange and lime juices, and pineapple.
Add the oil and stir until well combined.
Let stand at room temperature at least 15 minutes or up to 1 hour.
Just before serving, add mint and toss.
