2 Minute Scrambled Eggs

This scrambled eggs recipe is perfect for those who just have no time in the mornings to make breakfast. Not only is it quick and easy to make, but it is very healthy too.

For two minutes scrambled eggs, you will need:

2 eggs
1/4 cup water
1 tomato
1 onion
1 English muffin or slice of ciabatta
Salt and Pepper
Chives – optional

Method:

In a microwave proof bowl, crack the eggs.
Add in water and whisk well.
Chop up tomato and onion into small pieces and add to egg mixture.
Place a ceramic over microwave bowl.
Put bowl in microwave and heat for 90 seconds.
Toast your English muffins or bread.
Take out bowl, stir once and place back in for another 30 seconds.
Serve scrambled eggs atop the muffins and garnish with freshly snipped chives and ground salt and pepper. For real wow factor, serve with a truss of tomatoes baked in the oven with olive oil and salt for 20 minutes.
Tips: This scrambled eggs recipe is also easy as in a pan over a medium heat with butter, takes a couple of minutes longer.
