These stuffed spuds look just like treasure chests and potatoes are affordable, tasty and a superb source of much-needed carbs and vitamin C for the wee ones.
Serves: 4 Prep Time: 15 mins Cooking Time: 25 mins
4 potatoes, scrubbed
1 packet Maggi Cheese, Onion & Herb Sauce Mix
1/2 cup boiling water
1/2 cup grated carrot
1 spring onion, slices
1/4 cup grated reduced fat cheese
- Preheat oven to 200°C
- Microwave (1200W) potatoes on high for 10 minutes or until tender, leave to cool for a few minutes.
- Whisk together Maggi Cheese, Onion and Herb Sauce mix and boiling water in a bowl.
- Cut off potato tops and set aside. Scoop out insides and add to sauce, mash until smooth before adding carrot and spring onion.
- Spoon mixture back inside potatoes and sprinkle each with 1 tablespoon of grated cheese, press the lid back on top so that it sits like an opened treasure chest. Bake in oven until cheesy treasure is golden, approx 15 minutes.
