This Aussie bran cake is delicious served warm with ice-cream, whipped cream or custard and also translates well into a healthy snack. Just top with fruit and yoghurt.
To make Bran Cake, you need:
½ cup wholemeal flour
1 cup bran
1tsp baking soda (dissolve in ¼ cup milk)
1 tsp cinnamon
½ cup melted butter (or an olivio type product)
1 cup sugar
4 cups freshly sliced apple
How to make Bran Cake:
Mix dry ingredients. Beat eggs and sugar. Melt butter and combine all ingredients together.
Bake in greased baking dish 175C for 30-40 mins.
Serve warm with the apple slices, whipped cream and cinnamon or custard. Or for a healthy option – serve with lite yoghurt, fruit and drizzle with honey.
* This is an easy recipe to play with. Try using sultanas, raisins and even chopped walnuts. Canned fruit is also a great option.
