This superb recipe was sent in by Val King of Hastings. It’s an absolute pearler. Finally, a muffin recipe that is good for you.

Serves 12

3/4 cup each of plain flour & wholemeal flour
1 tsp baking powder
3/4 baking soda
1 1/2 tsp ground cinnamon
1/4 tsp salt
3/4 cup Alfa One rice bran oil
1/3 cup caster sugar
2 eggs
1 1/4 cups finely grated carrots (I use carrot pulp after I’ve made juice and they still turn out fine)
1/2 cup each of canned crushed pineapple (semi-drained) and raisins.

Pre heat oven to 180 degrees.
Line a 12 hole muffin tray.

Sift flours, baking powder, soda, cinnamon and salt in a bowl and mix well.

Beat oil, sugar and eggs until blended.  Add carrots, pineapple and raisins.

Gradually add the flour mixture mixing enough until just combined.
Spoon into muffin container or paper cases and bake 20-25 mins.
