Baked Stuffed Tomatoes Healthy Food Ideas

Here is a gorgeous Baked Stuffed Tomato recipe to help you get healthy, vegetarian and creative.

To make Baked Stuffed Tomatoes, you will need:

6 bacon rashers

6 tomatoes – medium in size

1 green capsicum, seeded and diced

4 tbsp parmesan freshly grated

50 g croutons

salt and pepper to taste and chopped parsley to garnish

How to make Baked Stuffed Tomatoes:

Preheat oven to 180 C. Grease an 18x28cm baking dish.

Fry bacon over medium high heat until evenly brown. Remove, drain, dice and set aside.

While bacon is cooking, wash tomatoes and slice off stem ends. Gently scoop out pulp, leaving a 2cm deep wall.

Finely chop pulp and place one third of it in a bowl, mixing in chopped bacon, capsicum, parmesan, croutons, salt and pepper.

Spoon equal amounts of mixture into each hollowed out tomato

Place stuffed tomatoes into prepared baking dish.

Bake in preheated oven for 20 to 25 minutes, until heated through. Sprinkle with chopped parsley.
