This chickpea salad is made of different ingredients and is bursting with colour, health, taste and flavour. Serve alone or with roasted veges, meat and hummus.

“Food” is one of life’s dependable pleasures and it can be a wholesome experience, if you’re eating the proper food. This chickpea salad recipe is rich in good carbohydrates and fats, nutrient-dense, lean, full of protein and fibre. It is tasty and will also satiate your hunger.


1. Chick Peas – 1 can
2. Chopped Cucumber, Onion, Celery, Coriander, Tomatoes, Iceberg Lettuce – can also include Capsicums, Romaine lettuce, Broccoli, Carrots and other veges.
3. Salt – to taste

For Dressing:

1. Olive Oil
2. Lemon – 1
3. Garlic – 2 cloves
4. Black Pepper – 1/2 tbsp

To make salad: Drain and wash the chick peas and layer them in a salad bowl. Then add all the vegetables and salt. Mix well.

To make the dressing: Mix olive oil, lime juice, garlic and pepper.

Drizzle the dressing over the salad. This can also be substituted with any kind of ready-made dressing available. Also, I garnished the salad with a few walnuts and dried cranberries to make it more exciting and health packed!
