This Chilled Lemon Delicious pudding is aptly named. Why not try it this weekend?

You Will Need:

3 large lemons

100g unsalted butter plus extra to grease

200g caster sugar

1 tsp vanilla extract

4 eggs separated

½ cup plain flour

2 cups milk

Icing sugar to dust

Passion fruit pulp to drizzle (or blueberries)

Cream to drizzle

Method:

Preheat the oven to 180 degrees.

Grease a 28 x 20cm baking dish.

Grate the rind of two lemons and juice all 3.

Cream the butter sugar vanilla and lemon rind until pale and fluffy and add the egg yolks one at a time beating well after each addition.

Fold in the flour alternating with milk and lemon juice (this mixture will look curdled but don’t worry!)

Beat the egg whites in a clean bowl until stiff peaks form.

Fold into the lemon mixture and then pour into prepared dish.

Place the dish in a large roasting pan.

Add enough boiling water to the pan so it comes halfway up the sides bake for 40 minutes.

Remove from the oven and allow to cool then refrigerate for at least 1 hour.

Dust with icing sugar and serve drizzled with berries or passion fruit and cream.

Serves 8.
