Fried Green Tomatoes Healthy Food Ideas

Not just a brilliant chick-flick from 1991, Fried Green Tomatoes are also a delicious breakfast dish. If your tomatoes have come to end, collect up the green ones and give this recipe a whirl.

Serves 4

You Will Need

3 firm green tomatoes, med- large size

1/2 tsp salt

1/4 tsp pepper

1/2 c flour

1/4 c milk

2 eggs, lightly beaten

2/3 c fine dry bread crumbs

olive oil

Method

Cut unpeeled tomatoes into 1.5 cm slices.

Sprinkle slices with salt and pepper and stand for approximately 10 mins.

Place flour, milk, eggs, and bread crumbs in separate shallow dishes.

Heat a small amount of olive oil in a frying pan to a medium heat.

Dip tomato slices in milk, then flour, then eggs, then bread crumbs and then fry for 5 mins on each side or until golden brown.

Only do a few slices at a time adding more oil each time as needed.

A great accompaniment to the big breakfast fry up or enjoyed on their own.
