Enjoy this tasty low fat mushroom quesadillas recipe that takes no time at all to make. The beauty of this recipe is that you can have it either for breakfast, lunch or dinner.

Serves 1-2

To make Mushroom Quesadillas, you will need:

1 1/2 C chopped Portabello Mushrooms
1 Tbls medium Salsa
1/2 C low fat grated Cheese (edam or sim)
1 Lebanese flat round bread or low fat tortilla.
2 Tbls lite sourcream

How to make Mushroom Quesadillas:

Lightly fry Mushrooms with spray oil in a pan.
Spread salsa over half the lebanese bread and then sprinkle the grated cheese over the top of the salsa
Put fried mushrooms over the grated cheese and then fold the bread in half.
Lightly spray with oil and fry the Quesadilla until brown.
Slice into 4 pieces and serve with sour cream.
