Stuffed mushrooms make a hearty and healthy meal that even the kids could help with to keep busy over the holidays. For those who aren’t the biggest fan of mushrooms – stuffing is the way to go.

Serves 6

To make Stuffed Mushrooms, you will need:

20 medium flat mushrooms with stems removed

4 slices grain bread

50 g blue cheese

50 g grated parmesan

100 g brie or camembert

hand full of basil leaves

2 cloves garlic

1 red onion

How to make Stuffed Mushrooms:

Put everything (except for the mushrooms) into a blender and blend until the mixture is just combined. Top the mushrooms with the mixture and bake at 180C for 10-15 minutes. Then grill for 5 mins or until the tops are golden brown.
