Yummy apricot fudge – why not give it a whirl for that shared morning tea, special homemade gift or just to impress your loved one. Easy enough for the kids to create.

Serves: 8


1 cup dried apricots
30oz brown sugar
1 pkt vanilla wine biscuits
1/2 tin condensed milk
4 oz butter
1/2 cup coconut


  1. Place all ingredients in a saucepan and heat gently while stirring until sugar has dissolved and butter melted.
  2. Bring to the boil without stirring and let mixutre boil until the soft ball stage (ie when dropped in cold water forms a ball).
  3. Remove from heat leave to stand for a few minutes then beat with a wooden spoon until thick.
  4. Pour into buttered tin and leave to set then cut into squares.

Marshall’s mum loves this apricot fudge!
