“I’ve recently been diagnosed with Type 2 Diabetes and found this superb banana bread recipe. It makes me feel like I am eating something sweet (which I crave) but can no longer have” Sue Garrett, Tamatea.

Serves 10
Banana Bread, you need:

2 large over-ripe bananas
1 tsp liquid artificial sweetner (eg Sucaryl, Splenda)
1 egg
1/2 cup white flour
1 cup wholemeal flour
50 gm butter
1 tsp salt
1 tsp baking soda
1/4 cup unsweetened natural yoghurt

Mash bananas & combine with yoghurt.
Cream sweetener and butter together with a fork.
Add egg & beat well.
Mix flours, baking soda and salt.
Add dry ingredients to creamed mixture alternately with banana mixture stirring to combine throughly.
Pour into a medium sized greased tin and bake at 180c for 1 hour. leave in tin for 10 minutes.
Turn out and cool throughly before slicing evenly into approx 20 slices.

Walnuts are an excellent addition to this loaf.
