This mighty little grain, pronounced ‘keen-wah’, was one of the staple foods of the Inca people and known to them as ‘chisayamama’ – mother of all grains. An apt name –quinoais rich in high quality, complete protein… meaning it contains all nine essential amino acids. It boasts the amino acid lysine, vital for tissue growth and repair, which is absent from majority of the grains we eat. It is also a good source of iron, magnesium, manganese, phosphorus and copper.  Being naturally gluten free with low GI, quinoa is one of the least allergenic foods. It cooks in just 15 minutes and the small seeds swell to around four times their size. Quinoa can be used as a base for delicious salads, or as a more nutritious staple in place of rice, potato or pasta.
