Hate the recession? Then you will adore this delish meatloaf recipe that you can create in your crockpot. Just assemble quickly before you go to work, come home to perfectly cooked kiwiana – a crockpot meatloaf and veges. Even better, makes perfect sandwiches the next day. Gotta love mince.

Serves 5

For Crockpot Meatloaf, you need:
4 large potatoes
6 sliced carrots
650g Mince
2 eggs, beaten
3/4 cup breadcrumbs
1/3 cup tomato sauce
1 small onion, finely diced
3/4 teaspoon salt
1/4 teaspoon dried marjoram or mixed herbs (1-2 Tbsp fresh from your garden ever better!)
1/4 teaspoon freshly ground black pepper
How to make Crockpot Slow Cooked Meatloaf:

Place carrots and potatoes in the bottom of the slow cooker or crockpot.

Combine remaining ingredients.

Mix well and shape into a loaf.

Place the loaf on top of the vegetables, it should not touch the sides of your crockpot.

Cover and cook on low for 8 to 10 hours.

You can make loaf ahead and freeze in tin foil. The crockpot meatloaf will cook just as well if put into cooker frozen, just cook 10 to 12 hours.

Serve your juicy, moist veges with your meatloaf and good ol’ tom sauce. Divine kiwiana kai in the crockpot.
