Warm Beef Salad with Blackberries, Avocado and Brie

A perfect summer lunch for two this salad recipe. Enjoy it over the warmer months as this beef salad has lots of colour and berries and is so easy to prepare.

Serves 2.


1/4 cup rice bran oil
1 level Tbsp runny honey
1 cup blackberries (or use blueberries and raspberries)
1 cup strawberries
Half an Iceberg lettuce
Herbs of your preference
100g Brie cheese
400g NZ beef strips
1/2 ripe avocado


Other half of the ripe avocado
3 Tbsp balsamic vinegar
1 level tsp honey.


Rinse and hull the strawberries and blackberries.
Core the lettuce. Wash and dry the leaves. Arrange them on two serving plates. Peel, stone and slice the avocado and arrange on top of the lettuce with the peeled and sliced kiwifruit, blackberries, halved strawberries and herbs.
Dressing: In a food processor or blender, blend: 1/2 ripe avocado, the balsamic vinegar and honey.
Heat fry pan to medium hot. Sear the beef 1-2 minutes each side – do not overcook. Arrange the beef strips on top of the salad and drizzle the dressing. Enjoy your iron boost!


– Use a whole selection of berries that come your way over summer.
– Omit the cheese for dairy free.
– Add nuts for extra protein.
– Lamb works very well here too.
