Kiwiana kaimoana as its best! Plump scallops crumbed and baked. Simple and delicious with a bit of a heat kick.

Serves 8

To make Crumbed Scallops, you will need:

700 g scallops
1/2 tbsp salt
1/2 tbsp pepper
1/2 tbsp cayenne pepper
1 cup bread crumbs
1 egg
2 tbsp milk
115 g butter, melted

How to make Crumbed Scallops:

Heat oven to 230? C
Mix together salt, pepper, cayenne pepper and bread crumbs.
In a separate bowl beat egg and milk until well combined.
Dip scallops in crumb mixture, egg mixture, and again in crumbs.
Place dipped scallops in roasting dish and drizzle over the melted butter.
Bake for 20-25 minutes until golden.
