Chicken and Tomato Wrap
This chicken and tomato chicken wrap is a delicious healthy option for lunch this summer. It is quick and easy and oh so tasty.
1/3 C honey Dijon salad dressing
1/4 C mayonnaise
2 C cubed cooked chicken breast
1 green pepper, chopped
2 tomatoes, chopped
4 lettuce leaves
1/2 C grated cheese
- In a bowl, combine salad dressing and mayonnaise and mix together well.
- Chop up the tomato, green pepper and chicken and add them into the mayonnaise and salad dressing mixture, stirring gently.
- Place the tortillas on a flat surface and line with lettuce and grated cheese.
- Divide the chicken mixture amoung the tortillas and roll them up tightly so that the filling is completely enclosed.
Tip: If you don’t want to serve them immediately, wrap in waxed paper and chill until ready to serve.
