The simple addition of miso to your favorite nuts makes an exotic and nutritionally rich snack. Quick and simple to make, this Miso Glazed Mixed Nuts recipe will become your favorite snack food.
1 cup mixed unsalted raw nuts (I used 1/3 cup each of peanuts, cashew nuts and almonds)
1 tablespoon sesame oil
2 tablespoons miso
1 tablespoon sugar
- Heat ½ tablespoon of sesame oil in a small frying pan over a high heat. When the oil is hot, add all the nuts. Stir fry until the nuts colour slightly (this should take only 4-5 minutes). Be careful not to burn them.
- Drain nuts onto kitchen paper and set aside.
- Wipe clean the frying pan. Heat ½ tablespoon sesame oil. Add miso and sugar and mix well. As soon as the sugar is dissolved and miso mixture becomes shinny return the nuts to the pan. Mix thoroughly and then immediately take the pan off the heat.
- Let the nuts cool to room temperature and serve with crackers to accompany drinks or store in an airtight container for up to a week.
Tip: Serve the Miso Glazed mixed Nuts wrapped in lettuce leaves for a healthy snack. You don’t have to use mixed nuts – I like making this snack with just peanuts too.
