Avocado Scrambled Eggs – a sustaining and delicious combo with heaps of protein. The avocado egg and bacon combination is heavenly. It may seem a little strange, but you’ll be so glad you tried this scrambled eggs gluten-free, healthy egg recipe.

Ingredients:

6 rashers bacon

8 eggs

½ cup milk (or milk alternative)

½ tsp salt

¼ tsp pepper

1 medium ripe avocado, peeled and cubed

2 tbsp ghee (or butter if not concerned about dairy)

Method:

Fry or grill bacon until crisp, then set aside. In a bowl, beat eggs. Add milk, salt and pepper. Stir in avocado.

Melt ghee in a skillet or frying pan over medium heat. Add egg mixture. Cook, stirring gently, until the eggs are completely set but still having a gloss, do not over cook. Crumble cooked bacon into pieces and sprinkle over eggs. Season again if required, and enjoy.

Tips: Leave out the bacon if you’re a vegetarian. Alternatively use ham, or even better vegetables.
