Serves 8

Blackcurrant Muffin recipe:

1 ¾ cups self raising flour
4 tablespoons sugar
1 cup frozen blackcurrant berries (or fresh if in season)
1 egg
¼ cup oil (not olive, try rice bran oil)
¾ cup milk
