Winter is the perfect time to enjoy scrumptious, saucy sausages straight from the oven and served on a pile of potato mash. Forget those artificial packet mixes!
Simply throw some quality sausages into a baking dish, along with a couple of tinned cherry tomatoes, chopped garlic, rosemary, thyme, bay and oregano then drizzle well with extra virgin olive oil and balsamic vinegar, salt and pepper.
Mix well then make sure the sausages are on top of the herby tomato mixture.
Bake for half an hour, turn and bake another 15-30 minutes.
This method gives you an intense tomato sauce. Serve with herby potato mash, kumara mash, rice, pasta, lentils or quinoa.
Another easy idea is to cook off some sliced sausages such as Smoked Pork and Fennel and mix with cooked pasta to make a pasta bake.
Just add whatever you feel like including a good tomato pasta sauce. Maybe some roasted red capsicums, olives, chopped anchovies, fresh herbs or spinach, courgettes, eggplant and some mozzarella or blue cheese then bake for 20 minutes. Also, try the meal with quinoa.
