When the weather is warm, what better way to eat healthy and summery? A vegetable medley all roasted and crispy on the BBQ.

Serves 6

For a BBQ Vegetable Medley, you will need:

3 Kumara (peeled)
4 Parsnips (peeled)
4 Potatoes (scrubbed clean)
3 Carrots (peeled)
2 Small red onions (quartered)
4 sticks Rosemary (leaves only, ie. stripped)
1 handful Fresh Thyme
1 head Garlic (smashed, skins left on)
½ Tbsp Sea Salt
4 Tbsp Olive oil

How to make BBQ Vegetable Medley:
Par-cook your vegetables in a microwave safe glass bowl for 8 minutes in the microwave.
Pre-heat the oven solid top griddle on your BBQ.
In your bowl, coat all the vegetables with the herbs, olive oil and sea salt, toss together and then grill on your BBQ for 30 minutes or until cooked, tossing frequently.

BBQ Vege Tip: get creative with what you have in the fridge! Don’t be afraid to add pumpkin, zucchini, courgettes, capsicums, onion, brussels sprouts, broccoli etc.
