This amazing Zucchini Jam recipe is great for when you need to use up lemons in the cooler, citrus months or get through those cute courgettes when they are on special or in your garden in warmer times.

Serves 30

To make Zucchini Jam, you will need:

1kg green zucchini

Juice and zest of 3 lemons

1kg sugar

125g butter

How to make the Zucchini Jam Curd:

Chop zucchini finely and steam until tender. Purée in a food processor. Place zucchini pulp in a pot with the rest of the ingredients and stir over a low heat until the sugar is dissolved. Increase heat and boil for about 30 minutes, until the curd is thick and creamy like lemon honey. Pour into warm, sterilised glass jars and seal.

Zucchini Jam tips: Use this jam to make a healthy zucchini meringue pie, use it as a topping on french vanilla icecream or just eat on toast!

Marrows and courgettes are also suitable for this Zucchini Jam recipe.
