If you want a salad that is as flavoursome as it is nutritious, you can’t go past this Greek Salad. This dish is healthy and delicious.

Serves 6

To make Greek Salad, you will need:
2 telegraph cucumbers, sliced
Punnet cherry tomatoes, halved
1 medium red onion, sliced
1 1/3 cups coarsely chopped fresh parsley
1 1/3 cups drained pitted kalamata olives, halved if large
1/2 cup extra virgin olive oil
1/2 cup lemon juice
1 1/2 teaspoons dried oregano
1 packet of your favourite feta cheese
Salt and fresh-ground pepper

How to make Greek Salad:

In a large bowl, combine cucumbers, tomatoes, onion, parsley, and olives.

In a small bowl, mix olive oil, lemon juice, and oregano.

Break feta cheese into about 1cm chunks and add to your cucumber mixture. Add your Greek Salad dressing and mix gently, adding salt and pepper to taste.

Serve atop freshly washed salad leaves, preferably Green Fancy or Cos, or just whatever’s in your garden.
