Ohh, go and get stuffed. Let’s look at a way you can wow your festive family visitors. For a kiwi Christmas you can’t go past a Roast Turkey. Stuff it!

Serves 8 – 10
For your Roast Turkey, you will need:

To Make the turkey stuffing:
1 Tbsp oil
1 onion, peeled and chopped
2 celery sticks, trimmed and chopped (or apple if you have no celery)
2-3 garlic cloves, crushed
1 red capsicum, de-seeded and finely chopped
175g fresh spinach (approx ½ bag of pre-packed from supermarket)
50g pine nuts
50g dried cranberries (or raisins are fine too)
175g fresh breadcrumbs
Salt and freshly ground black pepper
2 eggs
2 Tbsp brandy (optional)

To prepare the turkey:
4.5kg turkey, thoroughly thawed if frozen
1 onion, peeled and cut into wedges
6 unpeeled garlic cloves

How to make your Roast Turkey:
Preheat the oven to 190º C.
Heat the oil in a pan and gently sauté the onion, celery (or apple) and garlic for 5 minutes or until the onion is clear.
Remove from the heat and stir in the chopped pepper.
Chop spinach and add to the onion mixture with the remaining ingredients, mixing to a soft consistency with the eggs and brandy.
Stuff into neck cavity and secure the flap over the stuffing with a skewer or stitch with natural twine.
Stuffing tip: Roll any extra stuffing mixture into balls and cook around the turkey for the last 20 minutes of cooking the time.
Cooking the turkey:
Place upside down in the roasting tin and place the onion and unpeeled garlic in the area around the tied drums and cook for 3 hours.
Turn the turkey the right way up 40 minutes before the end of cooking time.
Test if cooked by piercing the thickest part with a long clean skewer. If the juices run clear, it is ready. If a little pink then return to the oven a cook a little longer.
Once cooked, place on the serving platter, cover with tinfoil and a clean tea towel and leave to rest for at least 15 minutes. This will make the turkey easier to carve.
Serve with the delicious stuffing, your favourite vegetables and lots of gravy. Other great turkey accompaniments is a cranberry or a brandy sauce.

Garnish tip: To make your turkey extra Christmas sensational, garnish the serving platter with spinach greens, cherry tomatoes and orange wedges (as shown).
