Looking for a divine rib recipe? Look no further! A splash of bourbon mixed with barbecue sauce makes the most amazing glaze. If you really like them sticky, make a little extra marinade and keep aside. When your ribs are cooked, heat the marinade and simmer for a few minutes until reduced, and pour over the ribs. Divine!

INGREDIENTS

1 rack pork ribs (approx. 1kg)

1 tablespoon tomato paste

2 tablespoons bourbon

2 tablespoons barbecue sauce

1 tablespoon fish sauce

1 teaspoon ginger, grated

1 teaspoon garlic, grated

METHOD

In a jug, stir together the tomato paste, bourbon, barbecue sauce, fish sauce, ginger and garlic. Using a pastry brush, glaze your ribs with the sauce, and pour the remainder over the top. Refrigerate for at least 4 hours.

Preheat oven to 185°. Cook, covered with foil, in the oven for 30 minutes. Remove foil and cook, uncovered, for 20 minutes.

Serve with a simple salad.
