Pork Tacos with Pink Pickles
It doesn’t get much simpler than this! Perfectly paired with pink pickles, this is a great go-to dinner when the last thing you want to do is spend hours in the kitchen.
Preparation: 15 minutes Makes: 6 small tortillas
1 chilli (any colour), seeds removed
2 cloves garlic
1 thumb ginger
1 teaspoon paprika
1 teaspoon rock salt
Ground black pepper
800g stir-fry pork
1 tablespoon olive oil
6 small tortillas
1 ripe avocado, smashed with a fork
1 small iceberg lettuce, shredded
- Whiz chilli, garlic, ginger, paprika, rock salt and pepper in a blender, and coat pork thoroughly with the mix.
- Heat olive oil in a wok or frypan until smoking. Toss the pork, stirring frequently, until cooked through.
- Divide pork equally between tortillas. Top with a dollop of smashed avocado, iceberg lettuce and a few pink pickled onions (recipe below).
