Who would’ve thought that mashed potato would be such a fantastic addition to a chicken and avocado pizza. Try it, you’ll love it.
1 store-bought pizza base (we use Giannis)
2 tablespoons tomato paste
1 cup of cooked, mashed potato (we use Wilcox Vivaldi Gold)
1 chicken breast, free range, cooked and diced
1 avocado, diced
1 cup of cheese (we use a mix of pre-grated mozzarella and tasty/cheddar)
4 rasher of bacon (we love Hellers)
Salt and pepper
1/2 cup sour cream
Fresh herbs to garnish, think marjoram or thyme (we love Superb Herb)
Preheat your oven to 180C. Line a baking tray with paper and lay down your pizza base, spoon over the tomato paste and cover the base.
Spoon over the cooled mashed potato to a 1/2 cm layer.
Sprinkle over the chicken pieces and the avocado, then the cheese.
Dot with bacon bits and season and place in the oven.
Bake for 15 minutes or until golden. Allow to cool on a bread board, dot with sour cream and fresh herbs. Serve immediately.
