This classic guacamole is the same texture and consistency as salsa. It’s an exceptional side dish to any Mexican meal, or serve as an appetiser with corn chips. Guacamole is a great way to enjoy chips and dip without guilt and you can swap and add ingredients to suit you – so get whizzing!
Prep Time: 10 Minutes Serves: 10
2 ripe avocados, halved, seeded, peeled and diced
4 medium tomatoes, peeled and chopped
2 garlic cloves
1/4 medium onion, chopped
1 green or red chilli (or red capsicum if you’re not a fan of chilli)
3 tablespoons coriander or parsley, chopped
1 1/2 teaspoons coarse salt
Sprinkle of cayenne pepper or chilli powder
Juice of 1/2 fresh lime
- Process tomatoes, onion, garlic, and chilli (or capsicum) in a food processor for about eight seconds.
- Add avocado chunks, coriander, salt, chilli powder and lime juice to the food processor bowl. Process for an additional ten seconds. Texture should be chunky like a salsa.
- Taste and adjust heat by adding more cayenne pepper/chillli powder. Refrigerate until served.
The lime or lemon juice will keep your gorgeous guacamole from turning brown.
Note: you can use a mortar and pestle instead of a food processor for a chunkier textured dip.
