Sticky Date Toffee Cake

A scrumptious brown cake you won’t be able to resist! The brown sugar works very well with the dates which makes this cake delightfully sweet, but not too heavy. Dates are a good source of dietary fibre and give you essential minerals such as calcium, iron, phosphorus, sodium, potassium, magnesium and zinc.

Dates also contain vitamins such as thiamin, riboflavin, niacin, folate, vitamin A and vitamin K. I know it may sound healthy’ish, but do keep your piece to a moderate size 🙂


250g dried dates, chopped
1 ½ cup boiling water
1 teaspoon bi carbonate soda
125g butter
100g brown sugar
2 eggs
250g plain flour
1 teaspoon baking powder
For the Sticky toffee topping:
100g brown sugar
40g butter
½ cup cream
A handful of walnuts chopped


  1. Place chopped dates and bicarbonate soda in a bowl. Pour boiling water and leave for at least 20 minutes. Let cool.
  2. Line a 22cm round cake tin with baking paper. Pre-heat oven to 180?C.
  3. Cream butter and sugar in a large mixing bowl. Add eggs, one at a time.
  4. Add softened dates and all the liquid, then flour and baking powder. Combine well.
  5. Pour cake mixture in the prepared tin and bake in the middle of oven for 40-45 minutes until an inserted skewer come out clean.
  6. Meanwhile, make the toffee topping. Heat butter, cream and sugar in a small sauce pan (or frying pan) over low heat. Keep stirring until the mixture thicken to soft caramel.
  7. Pour toffee over the cooled cake. Top with chopped nuts.
