Peanut butter choc shake is a satisfying drink that’s great after a good workout at the gym or an afternoon hunger buster. It’s a nutty, chocolate hit with a serve of fruit, making it high in fibre and a source of protein.
Ingredients: Serves 2.
2 frozen bananas
2 tablespoons Sanitarium Smooth Peanut Butter
2 tablespoons honey
1½ tablespoons cocoa
1½ cup So Good Almond Milk Unsweetened
- Place all ingredients in a blender and blend until smooth.
- Pour into glasses to serve.
Tip: Top with a sprinkle of shredded coconut and chia seeds.
Sweet Potato and Zucchini Fritters
A quick, healthy meal, Sweet potato and zucchini fritters are easy to make and great for the whole family!
Ingredients: Serves 6.
1 cup self-raising flour
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon salt
600g sweet potato, coarsely grated
250g zucchini, coarsely grated & squeezed of moisture
2 shallots, finely sliced
3 eggs, lightly beaten
3/4 cup So Good Almond milk
2 tablespoons oil
- Sift flour spices and salt into a bowl.
- Add sweet potato, zucchini and shallots.
- Combine eggs and almond milk together in a jug.
- Pour liquid ingredients into dry ingredients and mix gently until well combined.
- Heat oil in a large frypan and spoon 1/4 cup of mixture into pan.
- Cook until golden on both sides. Makes 12 fritters.
