FISH Restaurant, home to Auckland’s freshest sustainable seafood and incredible
panoramic harbour views welcomes Wallace Mua as their new executive chef from
Wallace is excited to bring his strong Pacific roots paired with a bit of French-flair to
influence the FISH Menu. Bringing his hospitality career full circle, Chef Mua returns to
Hilton Auckland after first joining the hotel’s housekeeping team at the early of age 15,
before finding his passion for cuisine and learning his trade at kitchens across Auckland
After following his now-wife back to her French homeland, Mua took the opportunity to
develop his palate and appreciation for fine dining and premium wines.
Six years in an array of French kitchens gave Wallace a true understanding for the
unparalleled quality of local produce sourced here in New Zealand.
“The passion New Zealanders have for our environment is hard to match. With seafood
especially, you can taste the difference – when I was in France I struggled to source
anything worth serving because of the overfishing. It’s exciting to be cheffing in a
country with produce I can be proud to present to our diners”, says Wallace.
Wallace will continue FISH Restaurant’s ethos of protecting our land, ocean and
waterways by ensuring produce is sourced sustainably, always with the quality of the
finished product in mind.
He’s proud to lead a restaurant with 100% MSC certified seafood, sourcing only from
MSC certified fisheries that have been independently assessed on their specific impact
to wild fish populations and the ecosystems they’re part of.
Wallace will also look to extend and implement this sustainable sourcing throughout the
hotel. Recently Hilton has announced a plastic straw ban companywide to fight ocean
pollution and protect ocean creatures around the world. There are several sustainability
initiative goals set for the Hilton Australasian properties across the next few years.
