With the warmer months well and truly here, there’s no better time to treat yourself to the ultimate summertime seafood dining experience at FISH Restaurant. Newly appointed Executive Chef Wallace Mua has just released his first menu at the restaurant, bringing with him a French-pacific flair that won’t disappoint.

Drawing inspiration from New Zealand’s South Pacific provenance, Mua is introducing a new menu that is bountiful, fresh and local, giving food lovers a truly unique seafood experience. After finding his passion for cuisine and learning his trade at kitchens across Auckland and overseas, Chef Mua has created a menu highlighting foods traditionally grown in The Pacific, mixed with fresh sustainable New Zealand seafood and the French style of cooking he learnt after six-years in an array of French Kitchens.

“Creating the new summer menu for FISH has been a great experience, I’m thrilled to be heading up a kitchen with such a high standard for quality and sustainable produce,” says Mua. “My new menu is quite unique, it includes flavours I grew up with combined with the techniques I’ve learnt along the way to introduce a truly unique dining experience for FISH customers.”

Not to miss dishes on the menu include a traditional Samoan Raw Market Fish Oka starter, made with taro puree, mango, taro crisp and tiger milk. Another stand out dish is the moreish Bouillabaisse fish stew originating in Marseille, France made with fresh market fish, shellfish, crayfish bisque and black garlic.

Perched on the end of Princes Wharf, FISH Restaurant boasts uninterrupted views of the Waitemata Harbour making it the perfect everyday escape for Aucklanders to enjoy summer on the water’s edge. The new menu is available daily for lunch and dinner.
