According to the 5+ A Day Charitable Trust, the summer fruit this year will be bigger and likely to have better flavour after the wet spring weather. This is their beautiful roasted stonefruit recipe will become favourite of your whole family.

Serves: A crowd
Preparation: 10 minutes
Cooking: About 15 minutes (or until fruit is soft but not collapsed)

Ingredients
8 apricots
6 plums
3 peaches
1 lime or lemon
Honey
Balsamic glaze or vinegar

Method

  1. Preheat oven to 180C
  2. Cut all stonefruit in half removing the stones and place on a oven tray lined with baking paper cut-side up
  3. Drizzle honey, balsamic and a squeeze of lime or lemon over the fruit and roast for about 10 to 15 minutes, they should be soft but still hold their shape
  4. Serve hot or cold for breakfast or dessert with cereal with mascarpone and mint

NB:The fruit should be ripe but firm
