Children are out of school and Christmas just around the corner, many people are trying to manage the mad festive rush! Here, SunRice shares two healthy and delicious ready-in-20 recipes to keep the whole family happy.

Crispy Chicken Rice Bowl with Avocado

Prep time: <20 minutes
Serves: 2

Ingredients

250g SunRice Steamed Brown Rice & Chia
2 tbsp Mirin
Oil for shallow frying
2 Crumbed chicken schnitzels
1 Avocado, diced
1 Carrot, cut into curls or thin strips
Toasted sesame seeds, sliced nori and Japanese Kewpie mayonnaise, to serve (see tip)

Method

  1. To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet. Place rice in a heatproof bowl and add mirin. Stir, then cover and set aside.
  2. Heat oil in a large frying pan over a moderate heat. Cook schnitzels for 3 minutes each side or until golden brown. Drain on kitchen paper.
  3. Divide rice between two bowls. Slice chicken and add to bowls along with avocado and carrot. Top with sesame seeds and nori slices and serve with mayonnaise.

Tip: If Japanese mayonnaise is unavailable, use regular mayonnaise.

Hot Smoked Salmon Poke Bowl

Prep time: <20 minutes
Serves: 2

Ingredients

250g SunRice Steamed Brown Rice
150g Hot smoked salmon, broken into chunks
1/2 Avocado, halved
1 Lebanese cucumber, sliced
2 cups Mixed lettuce leaves
1 Carrot, cut into sticks
2 Radishes, sliced
1/4 cup Drained pickled ginger
1/4 cup Ponzu dressing

Method

  1. Toast sesame seeds.
  2. To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet.
  3. Divide all ingredients (except dressing and sesame seeds) between 2 bowls. Serve with Ponzu dressing and sprinkle with sesame seeds.
