Blueberry, Ricotta and Honey Toast
1 punnet of fresh blueberries
2 slices of bread (mixed grain or rye loaves work well)
4 tablespoons ricotta cheese
1. Place bread in a toaster and toast to your liking.
2. Allow toast to cool slightly and then spread each piece of toast with two tablespoons of ricotta cheese.
3. Top with about 12 blueberries (more if you like).
4. Drizzle honey on top and garnish with fresh mint leaves.
