Homemade Popcorn Chicken

Everyone who loves chicken loves popcorn chicken, it’s the irresistible, bite-sized treat delivered to us by the benevolent Colonel. Of course, it’s not overly-complicated to replicate this divine treat (minus the signature herbs and spices) at home so you can make bigger batches and save a few bucks.

There are lots of different recipes out there that attempt tor replicate the signature taste of the original, but if you’re flexible you might discover something that’s better than what you are accustomed to. The following is one example of a popcorn chicken recipe.

Recipe Ingredients

  • Chicken
  • Flour
  • Baking powder
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper
  • Oregano
  • Smoked paprika

The batter is everything with popcorn chicken, so the actual cooking steps aren’t overly complicated.

Cooking Method

  1. Cut chicken into popcorn-sized pieces and then coat or marinate them in buttermilk.
  2. Mix your batter and then coat each piece of chicken with it.
  3. Deep fry in several batches, finishing when they are crispy and golden.

Chicken Tender Tacos

Recipe Ingredients

  • Chicken tenderloins
  • Cucumber
  • Sweetcorn
  • Garlic aioli
  • Slaw mix
  • Mini tortillas (go bigger if you’re really hungry)
  • All-American spice blend
  • Olive oil
  • Salt
  • Eggs
  • White wine vinegar

Cooking Method

  1. Begin slicing cucumber into think matchstick shapes and drain the sweetcorn can.
  2. Heat a large pan over high heat and add in corn kernels until they are lightly browned, which should take around 4-5 minutes. Cover the pan with a lid if the kernels start jumping out of the pan.
  3. Use a shallow bowl the mix together your All-American spice, a pinch of pepper and some salt. In another shallow bowl you need to whisk the eggs. In a third shallow bowl you should place your breadcrumbs. Dip chicken into the spice blend, into the eggs, and then into the breadcrumbs working like conveyor belt.
  4. Lower the heat on your frying pan to medium-high and make sure there is oil coating the base of the ban. Throw in the chicken you have just crumbed until they are golden on the outside and cooked through, which should take around 4-5 minutes on each side. Keep rotating the chicken to ensure it cooks evenly.
  5. While you keep one eye on the chicken as it cooks, start mixing your slaw, white wine vinegar, garlic aioli and crispy corn bits in a bowl and toss. Heat your mini tortillas in the microwave for 10 seconds to soften them up.
  6. Serve and start building your tacos.

Mexican Chicken Tortilla Bake

This is another great chicken dish that has a fun central-American twist on it by using tortillas as the base rather than potatoes. This Tex-Mex style dish is always a winner at family dinner time and is even better when topped with melted cheese and sour cream.

Recipe Ingredients

  • Green capsicum
  • Carrots
  • Garlic
  • Chicken thigh
  • Sweetcorn
  • Tex-Mex spices
  • Chicken stock
  • Chopped tomatoes
  • Mini tortillas
  • Shredded cheddar cheese
  • Coriander
  • Sour cream
  • Olive oil
  • Brown sugar

Cooking Method

  1. Preheat oven to 200 degrees fan forced and roughly chop up the green capsicum. Then grate the carrot and finely chop the garlic. Drain the sweetcorn and cut the chicken thigh into 1cm pieces.
  2. Grease a deep baking dish then arrange the tortillas so that they cover the base and side of the dish, minimising on gaps between them. Bake them for around 5 minutes until they are golden and crispy.
  3. While you wait for the tortillas to bake, start cooking the chicken thigh in a pan with olive oil. Toss and cook for 2-3 minutes until they brown and then transfer to a plate.
  4.  Take pan down to medium-high heat and add capsicum, sweetcorn and carrot, stirring for around 5 minutes until they all soften. Then add the Tex-Mex spices and garlic and cook for about 2 minutes until the fragrance is inescapable. Return chicken to the pan and stir it all together.
  5. Pour the spicy filling you have created into the tortilla lined dish you prepared earlier. Now’s the time to sprinkle your cheddar cheese and then bake for 10-12 minutes until it’s all golden and crunchy, ready to serve.
